Guilt free whole wheat cookies...

Ok so I am a huuuge fan of cookies from subway(the restaurant )... But I needed to find an alternative which was healthy but almost tasted the same. So I did some experiments, and this was the recipe that succeeded in bringing out that awesome cookie taste yet was relatively healthier...

Ingredients:

3 cups of whole wheat flour
2 cups of brown sugar
2 eggs
1 1/2 teaspoon vanilla extract
1/2 cup melted butter unsalted
3/4 tea spoon baking soda
1 teaspoon salt
Chocolate chips if desired

Method

Per heat oven to 150 C

First mix sugar with eggs and melted butter,( I didn't have a mixer so I did it with egg beater). It will not be very smooth.

Add vanilla extract and mix again, then set aside

Mix all the dry ingredients in a bowl thoroughly,(because if you don't do it thoroughly then u will get separate taste of baking soda and salt).

Now little by little add the dry ingredients in the egg mixture it should make a dry dough.

Thoroughly grease a baking tray, (I used pizza pan). Make table spoon sized balls from the dough, flat them a bit and then place them on the tray.

Make sure u leave sufficient gap between them because they will take a lot of space when they are done. ( I did five cookies at a time)

And if you want a bit more taste, Add chocolate chips and mix it again with hand. (because with a spoon the chocolate chips will break)

Bake them for 10 mins. Then take them out and wait for 5 more mins before putting them in a dish.

And your awesome cookies are done:)

Chicken veggie heaven.

Ok so my bubs is 15 months old. And like any 15 month old hyper active baby... She hates to eat any kind of healthy food... So did some experiments and this is one of the recipes that worked like a charm... The best thing about this recipe is that u can add any thing in it to make it more fun and healthy...

Chicken veggie heaven...

Ingredients:
1 pack minced meat (chicken,beef,turkey)
1 clove of garlic
1/3 zucchini
3,4 baby carrots
1 small potato
1 teaspoon lemon or orange juice
1 egg
Salt and black pepper powder to taste
Olive oil for greasing the pan
Besun or whole wheat flour

Method:

Pre heat oven to 150 C.

Finely shred all the veggies in to a bowl including the clove of garlic. Make sure that the shredded veggies match the consistency of the minced meat.

Add lemon/orange juice.

Mix egg and minced meat in it and mix well so they become one.

Add salt and black pepper to taste (make sure u taste every thing, my bubs likes it a bit spicy so I added a bit more black pepper).

Now add egg and flour, (I used besun which is basically chick peas flour. But u can use whole wheat flour as well).

Mix them all together. If u think that the consistency is a bit runny then add more flour until u think it's ready to make patties.

Thoroughly grease a baking tray and start making patties, and place them on the tray with a little gap between them.

Put them in oven for 15 mins, then turn them and let them bake for another 15 mins. Or until your sure that the meat is fully cooked.

It should be light brown on both sides. Take them out, cool it a bit and serve.:)

This was a huge success... My munchkin gobbled half of them in one go:p
